A World Champ Chili
- 1.25 lb chili grind (butcher can make chili grind for you)tri tip. Can use grnd beef or london broil.
- 1/4 lb pork sausage (I use hot)
- 1-8oz Hunts Tomato sauce
- 1/2 onion finely chopped (can use powder in a pinch)
- 3-Cloves garlic minced
- 1/4 C Gebhardt chili powder(this particular powder is found in 90% of all the champ ones)Safeway or on line. If you can't find it use the reddest powder you can get your hands on.
- 1/2 can beer
- 1 can chicken or beef broth
- 1-tsp oregeno
- 1-5oz spicy tomato juice
- 1-tsp salt?
- 2-tsp cummin
- 1-tsp tabasco
- 3/4 tsp cayenne
- 1-small tomato chopped
- Dash of paprika
- There are 2 spice groups that make this chili sing,,,So spice group as follows.
- #1: 1/2 your chili powder,1/2 your cayenne,all cummin,all oregeno, 1/2 your tabasco, salt? Set aside.
- Spice group #2 other 1/2 of Chili powder,cayenne,tabasco, set aside.
- To Prepare:Brown sausage,set aside,add onions to same pan,saute,add beef,brown,simmer 5 min,add 1/2 broth,add tomato,juice and beer,bring to simmer,
- add spice group #1. Simmer 2 hours
- Now add spice group #2.This bump is what gets the judges.
- Simmer 1 more hour.
- Real chili is served with sides of: onion,cheese,beans,french bread etc
