Hearty Chili
- 1/4 c olive oil
- 2 c diced vidalia onions
- 2 c diced sweet red, yellow and orange peppers
- 3 tbsp minced garlic
- 1.5 # ground beef
- 1 # hot breakfast sausage
- 4 x 14.5 oz cans petite diced tomatoes
- 1 c chopped carrots
- 2 14.5 oz cans beans, drained and rinsed
- 2 c Clamato, tomato juice, or soup concentrate
- 1/2 c chili powder
- 2 tbsp cumin seed
- 2 tbsp paprika
- 2 tbsp oregano
- 1 tbsp beef boullion concentrate (or 3 cubes)
- 1/4 c apple cider vinegar
- 1/4 c worcestershire sauce
- 2 tsp Tabasco
- 6 oz beer (optional)
- Heat olive oil in large skillet. Cook onions and peppers until soft. Add garlic and saute about 2 minutes, then add ground beef and sausage. Cook throughly, then drain of all liquids. Add to crockpot, with all remaining ingredients. Simmer in crock several hours. Enjoy!
