Vegan Chili-Slow Cooker
- 2 15oz cans black beans drain and rinse
- 1 15oz can cuban style black beans
- 1 package soychorizo
- 1 onion diced
- 4 cloves garlic, minced
- 1 1/2 cups diced bellpeppers- i used frozen mixed strips
- 1 cup mushrooms
- 1 cup frozen corn
- 2 15oz cans diced tomatoes with juice
- 1 cup vegetable broth
- 1 med to large zuccini, grated or diced
- 1 1/2 tsb cumin
- 1 tbs chili powder
- sea salt to taste
- use a 4 quart or larger, i used a 5 quart. put everything in crock pot stir. cook on low for 6-8 hrs.
- you could use any veggies you like.
- taste at the end of cooking for salt, or spiciness.
