Mediterranean Salmon
- Salmon Filet with skin on (Enough for however many people you want to serve. About1/4- 1/2 lb per person)
- Olive oil
- Lemon juice
- Italian Seasoning
- Feta Cheese
- (Serve with Wilted Spinach and
- Garlic Mashed Potatoes)
- Rub salmon filet with lemon juice and then olive oil.
- Place on aluminum foil in baking pan, skin side down.
- Liberally and I mean liberally (no pink to be seen) coat the salmon with italian seasoning such that the entire surface is covered.
- Cover and Refriderate overnight.
- Heat oven to 350 degrees F
- Sprinkle surface with crumbled feta cheese - not too much.
- Bake until done.
- Serve over Wilted Spinach with Garlic Mashed Potatoes.
- (The Salmon will just peel off the skin which will attach to the aluminum foil.)
- Alternatively - You can put the foil on the BBQ.
