Oatmeal Cake
- CAKE
- 1 c rolled oats
- 1&1/4 c flour
- 1 c white sugar
- 1 c brown sugar
- 1/2c shortening OR 1/3 c olive or canola oil
- 1 T cinnamon
- 2 eggs
- 2 t soda
- 1/2 t salt
- 1& 1/2 c hot water
- TOPPING
- 6 T butter
- 1/4 c milk or cream
- 1/2 c brown sugar
- 1/2 c fresh coconut flakes
- Mix together in bowl all cake ingredients except hot water. Add hot water. Beat thoroughly. Don't worry--the batter will be soupy! Pour into greased 13 x 9 pan.
- Bake 30-35 min @ 350 degrees.
- Cook all topping ingredients except coconut over medium heat to caramel texture and color. Sprinkle coconut flakes on top of HOT cake. Pour caramel topping over HOT cake.
