Crepes
- Batter:
- 3 Eggs
- 1 Cup Milk
- 1/2 Cup Water
- 1/2 tsp salt
- 1 Cup Flour
- 3 Tbs Melted Butter
- 3 Tbs Sugar
- Fruit Filling:
- 1/2 cup Sugar
- 1/2 Cup water
- 3 TBS Cornstarch
- 1/2 Cup Water
- 1 Package frozen fruit or equivalent fresh fruit
- For Crepe Batter, combine all ingredients and mix to a lumpy, runny consistency.
- Fruit Filling:
- Dissolve 1/2 C of sugar and 1/2 C of water. Heat until dissolved. Mash in some fruit into the sugar water.
- Mix separately another 1/2 cup water and 3 TBS cornstarch. Add to warm sugar water and bring to a boil and heat until liquid becomes clear. remove from heat and add fresh/thawed fruit.
- Heat a greased crepe pan or equivalent on high. Ladle in some batter to cover pan. (more batter will make the crepe thicker). Flip once.
