Peanut Butter Protein Cheesecake Mousse For One

  2. To make the peanut butter cheesecake mousse, place everything in a food processor and blend/mix for about 2-3 minutes, or until cottage cheese reaches an airy-mousse like consistency. (If you are using Greek yogurt, use a hand held electric mixer, and mix on high speed for about 2 minutes to whip the yogurt to an airy mousse like consistency.)

  4. To assemble the mousse with a 'pie crust', place crushed graham cracker in a small serving glass, and pour cheesecake mousse on top. Serve immediately, or cover and chill in the fridge!
