Chocolate Chip /Toffee Cookies
- 1/2 lb of butter (2 sticks)
- 1 cup light brown sugar
- 3/4 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 1/2 cups all purpose flour
- 1 tspn baking powder
- 1 tspn baking soda
- 1/8 tspn salt
- 1/2 cup old fashioned oats
- 4 ounces Werther's toffee candy (take a 4ounce bag of Werther's candy and chop it in the food processor - you want toffee bits)
- 10 - 12 ounces Semi Sweet Chocolate Chips
- Preheat oven to 325 degrees
- Beat butter and sugars
- Add eggs & vanilla - mix
- Add flour, baking powder, baking soda, salt and old fashioned oats - once ingredients are combined and the dough is formed, add toffee bits and chocolate chips and mix.
- I use a teaspoon to make cookies on sheet pan and bake in the oven til light brown on edges - about 6 minutes.
- I usually make a double batch and freeze some - I love to snack on this dough both raw & cooked! ;P
- To freeze the dough - take parchment paper, put dough in the center and then make a log.
- I then put it in a ziplock bag and put the date on it - can be stored for 1 - 2 months.
- I cut slices of the dough for a quick chocolate/toffee cookie dough fix or to bake off a few cookies!
