Bread And Butter Pudding
- 50g/2oz butter, softened
- 6-7 medium slices white bread, crusts removed
- 75g/3oz sultanas
- 3 medium eggs
- 300ml/1/2 pint single cream
- 300ml/1/2 pint whole milk
- 50g/2oz Tate & Lyle Fairtrade Caster Sugar
- pinch mixed spice
- Serves 6
- Preparation 10 minutes. plus soaking
- Cooking time : 40 mins
- 1. Grease a 1.2Litre/2 pint oven proof dish.
- 2. Spread the butter over the bread, cut each slice inhalf then arrange overlapping in the dish. Scatter over the sultanas.
- 3. Beat the cream, milk, eggs, sugar and mixed spice together. Pour over the bread and leave to soak for 30 minutes.
- 4.Pre-heat the oven to 180C/350F/gas mark 4.
- 5. Put the dish in a roasting tin and pour enough hot water to come halfway up the sides of the dish. Bake for about 30 - 40 minutes until the top is golden but still slightly moist in the centre
- 7.Serve with cream
