Sauteed Baby Spinach In Dijon Sake Sauce

  1. Heat olive oil in a large skillet
  2. Saute the white onion slices adding water as necessary till soft and slightly brown
  3. Add the mushrooms and garlic and a 1/4 C of water and saute over medium heat for 5 mins.
  4. Be careful not to brown the garlic.
  5. Next add the Dijon mustard and the Sake and emulsify.
  6. Let simmer for 5 mins.
  7. Add the spinach, pinch of salt and freshly ground black pepper and put a lid on it. Do not stir.
  8. After 3-5 mins. the spinach will be wilted and greatly reduced in volume.
  9. Toss it all up and serve hot.
