Sauteed Baby Spinach In Dijon Sake Sauce
- 2 tbs. Spanish Olive Oil
- 1/4 white onion, thinly sliced
- 2 cloves garlic, finely chopped
- 8-10 Cremini mushrooms, thinly sliced
- 1/4 C Dijon mustard
- 1/4 - 1/2 C of good quality cold Sake
- 1 bag baby spinach
- Heat olive oil in a large skillet
- Saute the white onion slices adding water as necessary till soft and slightly brown
- Add the mushrooms and garlic and a 1/4 C of water and saute over medium heat for 5 mins.
- Be careful not to brown the garlic.
- Next add the Dijon mustard and the Sake and emulsify.
- Let simmer for 5 mins.
- Add the spinach, pinch of salt and freshly ground black pepper and put a lid on it. Do not stir.
- After 3-5 mins. the spinach will be wilted and greatly reduced in volume.
- Toss it all up and serve hot.
