Lemon Ginger Cookies
- 1 cup softened unsalted butter
- 2 cups of packed light brown sugar
- 2 large eggs
- 1/3 cup sour cream
- 2 tablespoons of grated zest plus 2 tablespoons juice from 2 lemons
- 1 teaspoon vanilla extract
- 3 1/2 cups sifted all-purpose flour
- 2 teaspoons baking soda
- 2 teaspoons cream of tartar
- 1 teaspoon salt
- 2 teaspoons ground ginger
- 1/2 Cup finely chopped crystallized ginger.
- In a mixer, cream together the butter and brown sugar. Beat in brown sugar, eggs, sour cream, vanilla, lemon zest and juice until light and fluffy.
- Sift together the dry ingredients and then add to creamed mixture along with the chopped ginger, blending thoroughly.
- Drop by teaspoonfuls about 2 inches apart on lightly greased baking sheet.
- Bake at 350u0b0 for about 12 minutes. Place on rack to cool.
