Zucchini Pie
- 6 c. sliced, peeled zucchini
- 1 1/2 tsp. cream of tartar
- 1 tsp. nutmeg
- 1 Tbsp. vinegar
- 1 1/4 c. sugar
- 1 tsp. cinnamon
- 1/2 tsp. salt
- double crust
- 24 cream filled chocolate cookies, finely crushed (Hydrox)
- 1/4 c. margarine, melted
- 1/4 c. creme de menthe (green; live a little and add a little more)
- 1 (1 pt.) jar Marshmallow Creme
- 2 c. heavy cream, whipped
- Combine cookie crumbs and margarine.
- (Reserve 1/2 cup mixture for top.)
- Press into greased 9-inch spring-form pan.
- Add creme de menthe to marshmallow.
- Mix until blended at low speed.
- Fold in whipped cream.
- (I imagine you could use Pyrex pie plate for this, but works beautifully in spring-form pan.)
