Rum & Spice Cookies
- Cookie:
- 3/4 cup butter
- 1 cup granulated sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp ground allspice
- 1 egg
- 1/4 cup honey
- 3 tbsp rum
- 2 2/3 cups all-purpose flour
- Topping:
- 1/3 cup granulated sugar
- 3/4 tsp allspice
- In a large mixing bowl, beat the butter with an electric mixer on medium speed for 30 seconds. Add 1 cup sugar, baking powder, baking soda, and 1/2 tsp allspice; beat until combined. Beat in the egg, honey, and rum. Beat in as much of the flour as you can with the mixer. Stir in any remaining flour with a wooden spoon. Divide dough in half. Cover and chill for 1 hour, or until dough can be shaped into rolls.
- In a separate dish, stir together 1/2 cup sugar and 3/4 tsp allspice. Shape each half of cough into an 8-in roll; roll each in the sugar-allspice mixture to coat. Wrap in waxed paper or plastic wrap. Chill for 2 hours or until firm. Cover and reserve remaining sugar and spice mixture.
- Cut the chilled dough into 1/4-in slices. Place slices about 2 in apart on lightly greased baking sheets. Sprinkle with reserved sugar-allspice mixture. Bake in a preheated 375 degree oven for 8-10 minutes, or until edges are firm and bottoms are lightly browned.
- Remove cookies and cool on a rack.
