Jill'S Chili
- 1 white onion diced
- 1 lb stewing beef
- 1 lb ground chicken
- 3 T chili powder
- 1 T cumin
- 1 T dried oregano
- 1 t cinnamon
- 1 t chipotle chili powder
- 3 chipotle chilis in adobo sauce, chopped
- 2 cans diced tomatoes
- 1 can white kidney beans
- 4 T honey
- 6 garlic cloves minced
- 2 cups coffee
- 5 ribs celery, diced
- 1 red pepper, 1 yellow pepper chopped
- 1 bottle beer
- 2 large shallots, chopped
- Saute onion in 4 T olive oil or bacon fat in dutch oven Add stewing beef and brown. Add chicken and brown. Drain all fat but 3 tablespoons. Add all spices, chipotle chilis, 1 t salt and honey to meat and stir to coat meat. Add coffee to deglaze pan. Add tomatoes, with juice, and beans (after rinsing). Simmer covered for one hour. Pull apart beef with fork and knife. Add beer and remaining vegetables, simmer covered for another hour.
- Garnish with grated cheddar cheese, sour cream and cilantro.
