Black Walnut Cake
- 1 1/4 c. chopped walnuts
- 3 1/2 c. sifted cake flour
- 5 tsp. baking powder
- 1 tsp. salt
- 1 c. shortening
- 1 tsp. almond flavor
- 1 tsp. vanilla flavor
- 1 1/2 c. sugar
- 4 eggs, separated
- 1 1/2 c. milk
- 1/4 c. sugar
- Sift
- the
- flour,
- baking
- powder
- and salt; set aside. Cream together
- the
- fattnd flavors, gradually add the 1 1/2 cups sugar,
- beat
- until light and fluffy.
- Add the egg yolks. Beat well.
- Addthe
- sifted dry ingredients alternately with the milk. Beat
- until
- smooth after each addition ending with flour.
- Beat the
- egg whites until frothy; add 1/4 cup sugar. Make a
- glossy (not dry) meringue. Fold into batter with nuts. Pour in 2 (9-inch) greased and floured pans.
- Bake at 350u0b0 for 45 minutes.
