Seafood Gumbo
- 3/4 to 1 lb. fresh shrimp, peeled and deveined or may substitute frozen precooked cocktail shrimp (55 to 60 in package), thaw and take tail fins off
- 1 pt. oysters (frying size)
- 1 lb. bay scallops
- 4 oz. crabmeat (optional)
- 1 medium to large onion, chopped
- 1 c. celery, chopped
- 1 green pepper, chopped
- 2 cloves garlic, minced
- 1 (10 oz.) pkg. frozen okra
- 5 to 6 c. defatted chicken broth (part of this will be used to saute)
- 1 large can whole tomatoes, chopped
- 1 Tbsp. Creole Seasoning
- 1 tsp. basil
- 1 tsp. oregano
- 1 tsp. Worcestershire sauce
- 1 tsp. hot pepper sauce (optional)
- In a large skillet or large cooking pot, saute chopped onion, celery, green pepper and garlic in 1/3 to 1/2 cup chicken broth. Add tomatoes and okra.
- Heat to simmer.
- Add 5 cups chicken broth and simmer, covered, for 15 to 20 minutes.
