Heirloom Plum Cake
- 12 oz. pitted dried plums
- 2 medium apples
- 3 cups all purpose flour
- 2 teaspoons baking soda
- 1 tsp. ground cinnamon
- 1 tsp. salt
- 1/2 tsp. ground cloves
- 2 cups granulated sugar
- 1 1/2 cups canola oil
- 3 large eggs, or 3/4 cup egg substitute
- 1 cup chopped walnuts
- confectioners sugar for garnish
- preheat oven to 325u0b0F. butter and flour a tube or bundt pan.
- chop plums coarsley, peel, core and shred the apples.
- combine flour, baking soda, and spices. beat granulated sugar, oil and eggs in a lrge bowl with an electric mixer until smooth. beat in the flour mixture and beat until combined. add the plums, apples and walnuts and beat on low until combined.
- spoon into prepared pan and bake about 1 1/2 hours. cool in pan 15 minutes then turn out onto a wire rack to cool completely. dust with sugar.
