New Orleans Chocolate Pie
- 1 1/2 cups chocolate wafer crumbs (about 27 wafers)
- 8 Tbsp (1 stick) butter, softened, divided
- 2 cups semisweet chocolate chips
- 3/4 cup firmly packed light brown sugar
- 1 Tbsp milk
- 2 tsp instant coffee granules
- 2 tsp rum or vanilla extract
- 3 large eggs
- 1/4 cup all-purpose flour
- 1 cup chopped walnuts
- Preheat the oven to 375 degrees.
- Combine chocolate wafer crumbs and 4 Tbsp butter in a medium bowl and mix well. Press into the bottom and sides of a 9-inch pie plate.
- Melt chocolate chips and remaining butter in a medium saucepan over low heat. Remove from heat.
- Add brown sugar, milk, coffee granules, and rum to chocolate mixture and mix well.
- Stir eggs and flour into the chocolate mixture. Fold in the walnuts. Spoon into pie shell.
- Bake until pie is set, about 20 minutes. Cool on a wire rack for 30 minutes before serving. Serve with ice cream, if desired.
