Vegan Oatmeal Chocolate Chip Walnut Cookies
- 1/3 cup chunky peanut butter
- 2 tablespoons coconut oil
- 1/2 cup sugar
- 1/3 cup almond milk
- 1 teaspoon pure vanilla extract
- 1 cup whole wheat flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup rolled oats
- 1/2 cup non-dairy chocolate chips
- 1/2 cup walnuts
- Preheat oven to 425u0b0F Oil a large baking sheet; set aside.
- Whisk together first five ingredients until very smooth. Whisk together remaining ingredients.
- Combine.
- Shape batter into cookie shape on prepared baking sheet. These don't spread out at all when baking.
- Bake for 9 minutes.
- Remove sheet from oven, and wait 10 minutes before transferring cookies to a plate or wire rack.
