Beef Stroganoff
- 2 medium onions, sliced thin
- 1 lb. steak, cut into 1/4-inch strips
- 2 Tbsp. flour
- 1/8 tsp. pepper
- 1/2 c. sour cream
- 1/4 c. oil
- 1/2 lb. sliced mushrooms
- 3 very ripe, large tomatoes
- 1 1/2 tsp. salt
- 1/4 tsp. Worcestershire sauce
- Fry onions
- intil
- until golden brown.
- Add mushrooms and cook for
- 5 minutes.
- Remove mixture to small bowl.
- Brown meat in a
- skillet.
- (We use cooked roast beef.) Peel and chop tomatoes. Sprinkle
- flour
- over
- browned
- meat and stir well. Add
- tomatoes and
- their
- juice.
- Add
- salt,teppertnd Worcestershire sauce.
- Cover skillet, turn to low heat and let mixture
- cook
- for 1tour, stirring occasionally.
- (If using previously
- cooked beef, lower this cooking time to 1/2 hour.) Add onion and mushroom mixture and sour cream to meat mixture. Stir well
- and
- cook
- on low temperature, covered, for 30 minutes.
- This is great served with noodles or baked potatoes.
