Sweet Hot New Potatoes
- 1 3/4 lb. new potatoes, quartered
- 2 small onions, finely chopped
- 2 Tbsp. butter
- 2 Tbsp. sugar
- 1 tsp. salt
- 2 Tbsp. all-purpose flour
- 1 c. milk
- 1 c. sour cream
- 1 1/2 Tbsp. white vinegar
- 1 tsp. Tabasco sauce
- In a 2-quart glass casserole, combine potatoes and 1/2 cup water.
- Cover and microwave on High for 8 to 11 minutes, stirring once.
- Let stand 2 minutes.
- In a 4-cup glass measure, combine onions and butter.
- Cook on High 2 to 5 minutes until onion is translucent.
- Stir in sugar, salt and flour.
- Add half the milk.
- Cook on High for 2 minutes.
- Stir.
- Add remaining milk; cook on High for 2 minutes.
- Stir in sour cream, vinegar and Tabasco sauce.
- Cook at 50% power for 2 minutes.
- Drain potatoes and stir in sauce.
- Serves 6.
