Fried Chicken Waldorf Salad W/Honey Curry Dressing
- 4 fried skinless boneless chicken breast fully cooked from your local deli's grocery store.
- 6 cups salad greens, washed and drained ( I like the mesculin mix)
- 1/2 cups dark raisins
- 1/2 cup chopped celery
- 1/2 cup prepackaged candied walnut pieces
- 1/2 cups crumbled goat cheese
- Curry Honey Dressing
- 1 cup mayonnaise
- 1/2 cups honey
- 1 Tablespoon fresh squeezed lemon juice
- 1/2 Tablespoons Curry Powder
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- Cut fried chicken breast into strips. Place 1 1/2 cups of salad greens onto each salad plate. Garnish each salad plate with 1/8 cup of raisins, celery, walnuts and goat cheese.
- Combine all dressing ingredients into a small bowl and wisk until smooth and creamy.
- Drizzle each salad with dressing and serve.
