Lentils With Attitude
- 2 1/2 cups of water
- 1 cup of brown lentils
- 3 garlic cloves diced
- 1 tblspoon cumin seeds
- 1 medium tomato chopped
- 1 medium onion chopped
- 1/4 cup chopped cilantro
- 2 fresh jalapeno peppers chopped (can also use serrano peppers or if you feel daring 1 haberno pepper chopped)
- olive oil
- smoked cooked turkey-- (OPTIONAL) (i usually use 1 turkey leg)
- salt to taste
- pepper to taste
- curry powder to taste
- boil lentils in water until tender add salt and pepper to taste
- add smoked cooked turkey (chopped into pieces) into lentils while boiling
- while boiling lentils do following:
- sautee onion, jalapeno, garlic in olive oil (just enough to cover pan) until soft
- add cumin seeds and sautee with above mixture
- add curry powder and chopped tomatoes
- finally add chopped cilantro
- add all of this to fully cooked lentils (which you should have been cooking while you did this)
- stir in and let simmer on low heat for about 10-15 minutes
- serve lentils over rice (I prefer Basmati rice)
- eat and enjoy!!
