Polly Baked Beans
- 1 (1 lb.) can butter beans
- 3 (1 lb.) cans Great Northern beans
- 1 lb. bacon
- 1/4 c. baking molasses (Brer Rabbit orange label, light and mild)
- 1/2 c. King syrup (dark)
- 1/2 c. dark brown sugar, packed
- salt and pepper to taste
- 1 1/2 c. ketchup, thinned with water
- 2 Tbsp. mustard
- 1/4 tsp. vinegar
- 1 large onion, chopped fine
- Fry bacon; drain and save 6 tablespoons grease.
- In a saucepan, warm ketchup, onion, mustard, vinegar, brown sugar, King syrup, baking molasses and bacon grease until hot.
- Stir bacon into beans, then pour sauce over beans in a baking pan.
- (Best to use an old iron pot.)
- Stir every now and then after it bubbles. Don't let it get too thick;
- best when juicy.
- Bake at 350u0b0 until the way you like them (thick or thin).
