Quick Homemade Raisin Bread
- 3/4 c. dark seedless raisins
- 1 c. boiling water
- 1-1/2 c. all purpose flour
- 1 tsp. baking soda
- 7 packets sugar substitute
- 1/2 tsp. cinnamon
- 1/4 tsp. salt
- 1 egg
- 1 tsp. vanilla extract
- 1/4 c. vegetable oil or melted margarine
- Non-stick vegetable spray
- Preheat oven to 350 degrees.
- Spray 9x5-inch loaf pan with non-stick spray.
- Dust lightly with flour.
- Combine raisins and water; set aside for 30 minutes.
- Combine flour, baking soda, sugar substitute, cinnamon and salt in large mixing bowl.
- Add raisins with liquid, egg, vanilla and oil.
- Mix just until dry ingredients are moistened.
- Pour into prepared pan.
- Bake for 40 to 45 minutes until golden brown and firm to the touch.
- Let stand 5 minutes; remove to cooling rack.
- Serve warm or slice and toast.
