Quick Homemade Raisin Bread

  1. Preheat oven to 350 degrees.
  2. Spray 9x5-inch loaf pan with non-stick spray.
  3. Dust lightly with flour.
  4. Combine raisins and water; set aside for 30 minutes.
  5. Combine flour, baking soda, sugar substitute, cinnamon and salt in large mixing bowl.
  6. Add raisins with liquid, egg, vanilla and oil.
  7. Mix just until dry ingredients are moistened.
  8. Pour into prepared pan.
  9. Bake for 40 to 45 minutes until golden brown and firm to the touch.
  10. Let stand 5 minutes; remove to cooling rack.
  11. Serve warm or slice and toast.
