Gumbo La Pontchartraine

  1. Cut chicken into serving portions.
  2. Dredge lightly in flour. Saute in the melted shortening until brown.
  3. Add onions and celery, cooking until soft.
  4. Add all other ingredients except the okra and oysters.
  5. Cook until the chicken is tender.
  6. Add okra and oysters. Cook an additional 15 minutes.
  7. Serve over rice.
