Gumbo La Pontchartraine
- 1 small stewing hen
- 1 tsp. flour
- 2 chopped onions
- 1 c. chopped celery
- 2 c. okra
- 2 c. tomatoes
- 1/3 chopped parsley
- 2 lb. shrimp, cook deveined
- 4 lb. crab claws
- 1 tsp. garlic powder
- 2 c. chicken stock or water
- 1 pinch thyme
- 1 Tbsp. seasoned salt
- 2 doz. oysters
- 1/2 c. chopped green pepper
- 2 tsp. Worcestershire sauce
- Cut chicken into serving portions.
- Dredge lightly in flour. Saute in the melted shortening until brown.
- Add onions and celery, cooking until soft.
- Add all other ingredients except the okra and oysters.
- Cook until the chicken is tender.
- Add okra and oysters. Cook an additional 15 minutes.
- Serve over rice.
