Cabbage Soup

  1. Rinse the cabbage in cold water.
  2. In a large stockpot, saute the bacon, onions and garlic in the oil for 5 to 7 minutes or until the onion is soft.
  3. Add the chicken broth and tomatoes. When the broth begins to boil, add the cabbage and pepper.
  4. Cook, covered, over high heat for about 5 minutes.
  5. Lower to a medium boil for 15 to 20 minutes, stirring often.
  6. Add the potatoes and thyme and continue cooking at medium boil for 30 to 35 minutes or until the vegetables are tender.
  7. Add more water if necessary. Makes 8 to 10 servings.
