Zucchini/Corn Casserole
- 3 cups zucchini, 1/2" dice
- 1 T EVOO
- 2 cups fresh corn
- 1 small onion, chopped
- 1 small red or green pepper, chopped
- 2 eggs, lightly beaten
- 1/2 t salt
- 1/2 t pepper
- 1 t dried oregano
- 1 cup swiss cheese, shredded
- 1 cup seasoned breadcrumbs
- Cook zucchini in 1/2 cup water until tender. Drain and set aside.
- Heat oil in saute pan.
- Add corn, onion and green pepper.
- Saute until tender but not brown.
- Add to zucchini
- Add salt, pepper, oregano and cheese.
- Stir in beaten egg.
- Transfer to a buttered casserole dish.
- Sprinkle breadcrumbs on top.
- Bake in 350 degree oven until knife in center comes out clean, appx 45 mins.
- Let set 15 mins before serving.
