Oatmeal Creme Pies
- 3/4 c dark brown sugar
- 3/4 c sugar
- 3/4 c butter
- 1 tsp vanilla
- 2 tbs dark corn syrup
- 1/2 tsp cinnamon
- 2 c flour
- 1 1/2 c oats * see note above
- 1/4 c bran buds cereal or bran flakes
- 1/4 tsp salt
- 1 tsp baking soda
- *To get the texture just right, you need to put your oats and bran buds into a food processor and pulse a few times , to even out the texture.
- Fluff together:
- 3/4 c dark brown sugar
- 3/4 c sugar
- 3/4 c butter
- 1 tsp vanilla
- 2 tbs dark corn syrup
- 1/2 tsp cinnamon
- Now add
- 2 c flour
- 1 1/2 c oats * see note above
- 1/4 c bran buds cereal or bran flakes
- 1/4 tsp salt
- 1 tsp baking soda
- mix dry and wet ingredients together add in 1/3 c hot water
- drop by tbs onto parchment lined cookie sheet
- freeze for 15-20 min before baking at 350 for 9-12 min
- Butter-cream filling:
- Take 1 stick softened butter, (salted) add 4 c shifted powdered sugar, 1 tsp vanilla 3 tbs cream
- mix until fluffy and sandwich between cookies. Enjoy!
