Oatmeal Creme Pies

  1. *To get the texture just right, you need to put your oats and bran buds into a food processor and pulse a few times , to even out the texture.
  2. Fluff together:
  3. 3/4 c dark brown sugar
  4. 3/4 c sugar
  5. 3/4 c butter
  6. 1 tsp vanilla
  7. 2 tbs dark corn syrup
  8. 1/2 tsp cinnamon
  9. Now add
  10. 2 c flour
  11. 1 1/2 c oats * see note above
  12. 1/4 c bran buds cereal or bran flakes
  13. 1/4 tsp salt
  14. 1 tsp baking soda
  15. mix dry and wet ingredients together add in 1/3 c hot water
  16. drop by tbs onto parchment lined cookie sheet
  17. freeze for 15-20 min before baking at 350 for 9-12 min
  18. Butter-cream filling:
  19. Take 1 stick softened butter, (salted) add 4 c shifted powdered sugar, 1 tsp vanilla 3 tbs cream
  20. mix until fluffy and sandwich between cookies. Enjoy!
