Cauliflower With Tomoato & Feta

  1. 1) Preheat oven to 375 degrees
  2. 2) Saute onion and garlic for 5 minutes until soft. Add tomatoes, cover and simmer for 5 minutes.
  3. 3) Add cauliflower and cook about 10 minutes, until cauliflower is crisp cooked.
  4. 4) Transfer all to an ovenproof dish in a single layer.Crumble feta on top.
  5. Whisk together 2T EVOO, cinnamon, 1/4 C water, and lemon juice and pour over vegetables. Break bay leaf in half and add to the mixture.
  6. 5) Add S&P and cover with aluminum foil.
  7. 6) Bake 50 min.; oncover and bake another 10 until golden.
  8. 7) Let stand 15 minutes and serve.
