Cauliflower With Tomoato & Feta
- 4T EVOO
- 1 onion
- 2 cloves garlic
- 6 plum tomatoes, seeded and finely chopped
- 1 cauliflower, cut into 1" florets
- juice of 1/2 lemon
- 1/4 t ground cinnamon
- 1 bay leaf
- 2 oz feta cheese crumbled
- S&P
- 1) Preheat oven to 375 degrees
- 2) Saute onion and garlic for 5 minutes until soft. Add tomatoes, cover and simmer for 5 minutes.
- 3) Add cauliflower and cook about 10 minutes, until cauliflower is crisp cooked.
- 4) Transfer all to an ovenproof dish in a single layer.Crumble feta on top.
- Whisk together 2T EVOO, cinnamon, 1/4 C water, and lemon juice and pour over vegetables. Break bay leaf in half and add to the mixture.
- 5) Add S&P and cover with aluminum foil.
- 6) Bake 50 min.; oncover and bake another 10 until golden.
- 7) Let stand 15 minutes and serve.
