Steak And Potato Casserole
- 2 Tbsp. butter
- 1 cup sliced onion
- 1 1/2 lb. cube steak
- 1/4 cup flour
- 1 1/2 tsp. salt
- 1/4 tsp. pepper
- 2 cups buttermilk
- 1 (2 oz.) can mushrooms
- 2 Tbsp. chopped parsley
- 4 cups sliced potatoes
- In a large frying pan, melt butter.
- Cook onion until tender. Remove.
- Brown meat; remove.
- To drippings in frying pan, add flour, salt, and pepper.
- Remove from heat.
- Gradually stir in buttermilk.
- Cook slowly until thickened.
- Stir constantly.
- Cook 2 minutes more.
- Add mushrooms and parsley.
- In a butter casserole dish, layer potatoes then onion and steaks.
- Pour sauce over all. Cover with aluminum foil.
- Bake at 350 degrees for 1 hour or until potatoes are tender.
- Serves 6.
