Banana Split With Warm Rum Butter Caramel Sauce
- 4 bananas
- 1/2 cup sugar
- 1/4 cup rum(dark is better)
- 1/4 cup water(stock syrup if you have)
- 2 tbsp butter
- little cream(heavy is better)
- pinch salt(small pinch)
- dash cinnamon
- 1.peel bananas, slice in halves lengthwise.
- heat pan (not alluminum), 2.melt 1 tbsp. butter til frothy not brown.
- 3. dash bananas with cinnamon, sprinkle with bit of sugar and 1/2 pinch of salt, add to pan cut side first-let em cook.
- 4. while bananas are searing run some hot water into a cup for easy scooping and get a cuple of clean tablespoons. oh yea you should pull the ice cream out of the freezer-it will have better "mouth feel" and be easier to scoop.
- 5.bananas are slightly browned, flip em and cook the other side briefly, just to warm em thru. remove to separate plate.
- 6. time for sauce... add rum to pan with water, cook til reduced by 1/2-watch for flames! then add rest of sugar cook til nice golden colour appears add 1 tbsp butter and stir in with wood spoon or whisk, slowly add cream and continue to stir...now pour into a separate bowl to cool slightly-cooked sugar is hot!
- 7. ok finally assembly: place two halves banana in bowl(nappe with warm sauce) or on plate cut side up;using two warm spoons make quick quenelles three sides but don't fuss ice cream melts fast on warm bananas and you should stack three of these then dous with more sauce. eat.
