Focaccia Bread
- 3 Tbl yeast
- 2 cups warm water
- 6 cups flour
- 2 Tbl olive oil
- 2 tsp salt
- 3 tsp honey
- 2/3 cup parmesan cheese, grated
- 1/4 cup cold water
- 4 tsp garlic, minced
- 1 Tbl dried oregano
- 1 Tbl dried rosemary
- 2/3 cup olive oil
- In large mixing bowl fitted with the flat beater, mix 3 cups of the flour and the yeast. Slowly mix in warm water. Mix in the 2 tablespoons olive oil, honey, salt, parmesan, and cold water. Change out flat beater for dough hook. Slowly add remaining flour.
- Transfer dough to a very well greased 18x24 baking pan. Coat hands with olive and and press dough evenly into pan. Make small dimples in dough using finger tips.
- Mix the remaining 2/3 cup olive oil, garlic and herbs. Spread over dough and sprinkle with kosher salt. Let rise approximately 1/2 hour. Bake in preheated 400 oven until evenly browned, about 25 minutes. Cool on rack & remove from pan.
