Heather'S Guacamole
- 4 medium avocados, slightly softened 1 cup purple (red) onions, chopped 3 plum tomatoes, seeded and chopped (about one cup)
- 1 medium lime
- Tabasco Sauce, approx 8 shakes
- 1 tablespoon Roasted Red Chili Paste , hard to find, use in place of tabasco sauce
- Chop tomatoes and onions and aside. Chop avocados into chunks, but don't mash.
- Mix tomatoes, onions, avocados in large bowl. Squeeze lime juice in and sprinkle Tabasco sauce.
- Mix together thoroughly. Becomes lightly mashed with nice avocado chunks in it.
- Cover with plastic wrap right on top of guacamole so no air touches it. If any of it turns brown, scrape that part off.
- Chill and serve in about 30 minutes with tortilla chips.
- Awesome! I served it as a dinner, also great used on fish or on a sandwich!
