Rugelach
- 3 Cups Flour
- 1 Heaping Teaspoon Baking Powder
- Pinch of Salt
- 1/2 Cup Sugar
- 3 Large Eggs
- 1/2 Cup Oil
- Juice of 1 Lemon
- 1 Tablespoon Vinegar
- 1/4 Cup Water
- Cinnamon & Sugar
- 1/4 lb Sweet Butter Melted
- Strawberry Preserves
- Crushed Walnuts
- Light Raisins
- Sift Flour with Baking soda & salt.
- Make well in flour mixture and add sugar and eggs.
- Beat sugar and eggs into flour mixture with fork.
- Add oil and continue mixing.
- Add lemon juice, vinegar and water and mix until combined.
- Dip hands into flour and knead, adding more flour if necessary.
- Dust dough with flour and place in covered bowl and lest rest for 20 minutes.
- Heat oven to 350 degrees.
- Greese a baking pan (or use parchment or baking mat).
- Separate dough into 5 pieces.
- Roll each one into a circle. Brush melted butter onto circle, sprinkle with cinnamon sugar, spread with preserves, top with walnuts and raisins.
- Cut into 8-10 triangles and roll.
- Brush tops of cookes with butter & sprinkle with cinnamon sugar.
- Bake for about 30 minutes or until light brown.
