Caramel Apple Pudding

  1. Preheat oven to 180c. Cut each apples quarters into 4. Heat a non stick pan over med heat until hot Add 2 teaspoons butter and half the apples, Cook shaking pan often for 2 min or until light golden brown. Remove to a bowl and repeat process with next lot of apples.
  2. Add 40g butter, 1/4 cup honey, 1/2 cup cream, and two tablespoons of the sugar to the hot pan. Cook, stirring occasionally for 3 min til sauce comes to the boil. Boil stirring often for 2 min or till sauce thickens. Return apples to pan. Stir gently to coat in the thick caramel sauce. Spoon apple mix into a 5cm deep 6 cup capacity ovenproof dish.
  3. Chop remaining buter. Combine flour, baking powder, chopped cutter and remaining 2 tablespoons sugar in a food processor. Process until looks like breadcrumbs. Transfer to a bowl. Combine egg, remeianing 1/2 cup cream and honey in a jug. Beat until well combined. Stir into flour mix. Drop spoonfuls of sticky dough over apple mix. Bake for 40 min or till cooked. test with skewer. Dust with icing sugar and serve with ice cream.
