Bea'S Fruit Cake
- 1/4 lb. each: orange peel, lemon peel and citron, chopped
- 1/2 lb. each: crystallized pineapple and cherries, chopped
- 1 (15 oz.) box raisins, chopped
- 1 1/2 lb. pkg. figs, chopped
- 1 1/2 lb. pkg. dates, chopped
- 1/2 lb. mixed, chopped candied fruits
- 2 c. mixed nuts, chopped
- 2 c. English walnuts, chopped
- 1 lb. margarine
- 1 lb. sugar
- 12 eggs, separated
- 1 (5 oz.) bottle rum sauce
- 1 (5 oz.) bottle brandy sauce
- 1 c. cooking wine
- 4 c. all-purpose flour
- 3 tsp. baking powder
- 2 tsp. each: cinnamon, allspice, nutmeg and ground cloves
- Mix chopped nuts and fruits; set aside.
- Cream margarine and sugar.
- Separate eggs and beat yolks.
- Blend egg yolks with margarine and sugar mixture.
- Add rum, brandy and wine; mix well.
