Simple Shrinp & Clam
- 1/2 Lb Large, shelled & deveined Shrimp
- 1 small can minced clams (with juice)
- 3 Tbl Olive Oil
- 2 Tbl Butter
- 1 Clove Minced garlic
- 2 minced Shallots
- 1/4 Cup fresh chopped parsley
- 1/2 cup white wine (sav blanc, etc.)
- Fresh pasta (angel hair, linguine, whatever)
- 1/2 cup fresh grated Parm cheese
- Fresh pepper to taste
- 1. Boile water & prepare pasta accorig to directions
- 2. Heat oil and butter in large heavy saucepan med high heat.
- 3. Add shallots, and cook briefly until translucent, add garlic, and cook over meduim heat for 2 minutes.
- 4. Add shrimp, and stir quickly in butter mixture for 1 -2 miutes, then add minced clams & broth.
- 5. Add wine and simmer 2 minutes , until shrimp cooked through. Add parsley
- 6. Drain pasta into bowl, add shrimp & sauce and toss together.
- 7. Dviide onto 2 plates, tp with parmesan cheese, and fresh pepper to taste
