Spicy Thai-Style Peanut Sauce

  1. 1. Heat oil in saucepan. Add garlic, ginger, and scallion. Saute 1 minute.
  2. 2. Add remaining ingredients, stir over medium heat and cook until slightly thickened and smooth.
  3. 3. Cool to room temperature and serve. If mixing with hot noodles, no need to cool it. Will coat 1 lb of linguini or angel hair pasta.
  4. 4. Refrigerate for up to a week, best flavor served at room temperature.
