Szechwan Spicy Chicken
- t pound chicken breast
- t/2 teaspoon salt
- t-5 tablespoons flour
- t egg
- t cups oil for deep frying
- t/4 cup onion
- t scallions, chopped fine
- t slices fresh ginger, chopped fine
- t/4 cup catsup
- t/4 cup chicken stock
- t tablespoon sherry
- t tablespoons chili paste with garlic (use 1 tablespoon, if you prefer less spice)
- 1.tut chicken into cubes diagonally. Add salt, flour. Egg the chicken and dredge through the flour mixture.
- 2.teat oil in Wok, deep fry chicken 1-2 minutes. Drain. Remove.
- 3.teheat 2 tablespoons oil in Wok, stir fry onion, scallions and ginger one minute. Add catsup, stock and sugar, Bring to a boil.
- 4.tour in Chicken. Add Sherry and chili paste with garlic. Stir fry briskly one minute.
