Blueberry Heavenly Muffins
- 1 stick butter
- 1/4 cup sugar
- 2 cup A.P. flour
- 2 tsp baking powder
- 1/2 tsp cinnamon
- 1/2 tsp salt
- 2 large eggs
- 1/4 cup milk
- 1/4 cup sour cream
- 2 1/2 cup blueberries
- 1 tsp vanilla
- lemon zest
- 2 tblsp lemon juice
- Cream butter in mixer, add sugar and eggs
- Combine remaining dry ingredients in separate bowl bowl
- Combine remaining wet ingredients in a separate bowl (except blueberries)
- Alternate between adding wet and dry ingredients to butter/sugar mixture. Do not overmix.
- Gently fold in blueberries with a spoon or spatula so you do not break them
- Sparay muffin pan and paper cups. Pile high and top with sugar and bake at 375 for approx 30 minutes
