Herbed Chopped Veggies
- 8 ounces green beans, trimmed and cut into 1/2-inch pieces
- 8 ounces asparagus, trimmed and cut into 1/2-inch pieces
- 1/4 cup chopped walnuts
- 2 tablespoons butter, softened
- 2 tablespoons chopped fresh mint
- 1 tablespoon chopped fresh cilantro
- Salt
- Ground black pepper
- Lime wedges
- 1. In a large saucepan cook green beans and asparagus in lightly salted boiling water for 2 minutes; drain. In a large bowl combine walnuts, butter, mint, and cilantro. Add green beans and asparagus; toss to coat. Season to taste with salt and pepper. Serve with lime wedges.
