Nutritious Red Pepper Carrot Soup
- 1 red onion, chopped
- 2 large red peppers, roughly chopped
- 3 large carrots (skin on), chopped
- 1 medium sweet potato (skin on), chopped
- 2 cups vegetable broth
- 1 cup boiling water
- 1 teaspoon paprika
- 1 pinch of salt, to taste
- 1 pinch of ground black pepper, to taste
- 1 small handful coriander, chopped
- 1 teaspoon sesame seeds
- Heat the olive oil in a large saucepan and fry the onion until just going soft, then add the red pepper and stir fry for about 3 minutes. Now add the carrots and sweet potato and stir fry for a further 3 minutes.
- Pour in the vegetable broth, turn the heat to medium high and allow the soup to simmer for about 20 minutes, or until the vegetables are very tender.
- Take the soup off the heat and stir in the paprika, salt and pepper. Allow the soup to cool as per your blender instructions. Once the soup is cool enough, blend until silky smooth. Serve hot with chopped coriander and sesame seeds sprinkled on top.
