Dietetic Applesauce Cake
- 1 1/2 c. all-purpose flour
- 1 1/2 tsp. baking soda
- 1 tsp. cinnamon
- 3/4 tsp. nutmeg
- 1/2 tsp. pumpkin pie spice (optional)
- 1/4 tsp. salt
- 1 tsp. vanilla
- 1/2 c. reduced calorie margarine
- 1/3 c. Twin sugar substitute
- 1/4 c. egg substitute or 1 large egg
- 1 1/2 c. unsweetened applesauce
- 1/4 c. plus 2 Tbsp. raisins
- 1/2 c. chopped pecans or walnuts
- Heat oven to 350u0b0.
- Spray loaf pan with Pam.
- In medium bowl, combine flour, baking soda, cinnamon, nutmeg, pumpkin pie spice and salt.
- In large bowl with mixer on high speed, beat margarine and Twin sugar substitute until light and fluffy.
- Beat in egg until blended.
- Gradually add flour mixture; beat until combined. Add applesauce; beat until blended.
- Stir in raisins and nuts. Pour batter in pan.
- Bake for 45 to 55 minutes, until toothpick inserted comes out clean.
- Cool in pan on rack for 10 minutes; remove from pan.
- Let cool completely.
