Gerald And Becky'S Green Bean Casserole
- 1-1/4 cup finely chopped onions
- 1/4 cup salted butter
- 1/4 cup flour
- 1 tsp salt
- 1/2 tsp pepper
- 3/4 cup whole milk
- 2 lbs. fresh green beans
- 3/4 cup light sour cream
- 1/2 lb. shredded four cheese Mexican
- 1 cup "cheddar" fried canned onion rings
- Steam green beans util bright green and still crisp then set aside. Saute onions in melted butter, salt,and pepper in a medium sauce pan under medium low heat till onions are softened and translucent. Add flour slowly while stirring to form a blond roux then add milk and continue cooking until thick and bubbly and remove from heat. Stir sour cream in roux add green beans and mix thoroughly Spread 1/3 of green beans in baking dish and sprinkle with 1/3 shredded cheese then repeat layers. Bake at 400F. for 20 minutes minutes then top with onion rings and continue baking for 10 additional minutes.
