Grilled Duck
- 6 Lbs. Maple Leaf Farms Duck.
- Stuffing:
- 1 Orange (peeled & sliced).
- 1/4 cup Apricots (sliced).
- 1/4 cup Orange Juice.
- 1 Mango (peeled & sliced).
- 1 Papaya (peeled & sliced).
- Sauce:
- 1 cup Mixed Berries (Black, Blue & Raspberries);fresh or frozen.
- 1/3 cup Apricot Syrup.
- Wash off the Duck with cold water on the outside and inside and pat dry with a paper towel.Mix the stuffing ingredients together in a large mixing bowl and then it inside of the Duck and use small sewers to hold the cavity closed.
- Put the sauce ingredients in a food processor and blend until well mixed.
- Heat the grill on medium heat (indirect heat; put the right and left burners on and leave the center burner off) and coat the grill with cooking spray. Place the Duck on the upper grill and cook for 2 hours.
- To serve:slice thin slices of the Duck and pour the sauce over the Duck.
