Bernaie'S Diabetic Friendly Frozen Yogurt
- 2 cans of fat-free evaporated milk (370ml each)
- 1/4 C strong coffee
- 1 1/2 C Splenda
- 1 Tbsp + 1 tsp cornstarch
- 1/8 tsp salt
- 100g dark chocolate, chopped
- 1/2 C heavy cream
- 2 tsp vanilla
- 2 C yogurt, plain
- In a medium saucepan combine evaporated milk, coffee, Splenda, cornstarch, & salt. Heat over medium heat while whisking occasionally until mixture comes to a boil. Continue to whisk while at the boil for 3 minutes. Take mixture off the heat and immediately transfer to another bowl.
- At the same time as the above is happening, heat the cream in a small bowl in your microwave. Add your chooped chocolate into the hot cream. Stir it until it comes together.
- Lastly, whisk the chocolate cream, yogurt, and vanilla into milk mixture, and whisk until smooth.
- Cool in the frige until cold.
- Process in an ice cream maker according to manufacturers directions.
