Lemon Cranberry White Chocolate Scones
- 3/4 cup buttermilk
- 1/4 cup sugar
- 1 1/2 tsp vanilla extract
- 1 egg
- 2 cups flour
- 1/4 cup dry oats
- 1 tbsp baking powder
- 1/2 tsp cinnamon
- 1/2 tsp salt
- 3 tbsp butter, cold and diced
- 1/3 cup dried cranberries
- 1/2 cup white chocolate chips
- Glaze:
- 1 tbsp lemon juice
- 1/2 tsp vanilla
- 1 1/2 tbsp milk
- 3/4 cup powdered sugar
- 1. Preheat oven to 375 degrees.
- 2. In a bowl or mixer, mix together buttermilk, sugar, vanilla, and egg.
- 3. In a separate bowl, sift together flour, oats, baking powder, cinnamon, and salt.
- 4. Cut the butter into the flour mixture with pastry cutter or two knives.
- 5. Mix in cranberries and white chocolate into flour mixture.
- 6. Add flour mixture into buttermilk mixture, stirring until combined.
- 7. Place dough on baking sheet lined with parchment paper and form into a 9-10 inch circle.
- 8. Bake 22-25 minutes or until center is cooked.
- 9. After removing from oven, take a pizza cutter and cut into 8-12 triangles.
- 10. While scones are cooling, prepare glaze by mixing it all together in a small bowl.
- 11. Drizzle over scones and ENJOY!
