Tamale Pie
- For the Filling:
- 1 Tbsp olive oil
- 1 med onion
- 2 cloves of garlic, minced
- 1.5-2lbs ground beef
- 1/2 C chopped bell pepper
- 1/2 C chopped or shredded zucchini
- 1/2 tsp chipotle puree or smoked paprika
- 1 tsp salt
- 1 tsp sugar
- 2 tsp white vinegar
- 1 12oz can tomato sauce
- 1 15oz can beans
- 2 C frozen corn (thawed)
- 3/4 C grated cheddar cheese
- For the Cornbread Topping:
- 2/3 C flour
- 1 3/4 C cornmeal
- 2 tsp baking powder
- 1 tsp salt
- 1 Tbsp sugar
- 4 Tbsp oil or melted butter
- 1 C buttermilk
- 2 eggs
- 1/2 C grated cheese
- 1. Heat oven to 400.
- 2. Saute onion and garlic in medium pan til soft.
- 3. Add ground beef, bell pepper, zucchini, chipotle seasoning (or paprika) and salt. Cook until no pink remains in meat.
- 4. Add the sugar, vinegar, tomato sauce, beans and corn. Simmer for a few minutes. Adjust for taste.
- 5. Transfer to 9 x 13" dish and top with cheese.
- 6. Whisk together the flour, cornmeal, baking powder, salt and sugar in one bowl.
- 7. Whisk the eggs, buttermilk and oil in another bowl; then add wet ingredients to dry, and stir to combine.
- 8. Add the cheese, then spread over filling.
- 9. Bake for 20 mins, checking at 15 mins. Pie is done when cornbread is firm and golden brown.
