Beer Battered Fried Fish
- 1 cup flour
- 1/2 cup corn meal
- 1/2 cup corn starch
- 2 teaspoons baking powder
- 1 tablespoon salt
- 1 teaspoon pepper
- (1) 12 ounce can of lager beer
- 6 pieces of Cod, Grouper, Mahi Mahi, or Tilapia
- Sunflower, Soybean, or Safflower Oil
- Combine all dry ingredients in a mixing bowl, then whisky in one can of cold beer.
- Dredge the fish in some flour and pat off any excess. Dip the fish in the beer batter, making sure it is completely coated.
- Heat oil to 350 degrees and place battered fish in stock pot. Cooking time will vary with the size of the fish - a 4 ounce piece will take about four minutes. Only place a few pieces in at a time to avoid crowding the pot. Remove fish using a frying basket, let cool, and eat.
